Theoretically is it possible to fit any type of brembo rear brake calliper to a bike if you have access to a cnc machine at work and could billet a mount for it? Looking to get a brembo brake calliper from ebay and get it fitted to a gpz400r rebuild I'm doing!

Yup,
Use the GPz as a template for the offset and adjust the pitch for fitting the Brembo,also measure the calipers offset against each other and adjust the mounting posts to suit.
With CNC access you can fit any caliper you want !
I had a 2pot Brembo hooked up on my ZRX using the ZXR H rear wheel and disc , I used an Active Brembo hanger intended for the ZRX11/1200 and had sleeves made so it would fit my set-up
BTW, I still have the Rad/Cooler bracket here for you
