The problem with that is I'd then have to take the baffle up 3 flights to leave it in my gf's flat! Err... and I don't have a separate baffle!

Mine was small enough to tuck under the passenger seat, used to stick it in my bag too. To buy one is only 20 quid or so. At the end of the day it may not even keep her happy (if thats what you want) but other than putting the baffle in theres not much else you can do about the noise. You could always push the bike up the road but that could easily end up pissing someone else off.
