Re: lack of power
do the tappets/clearances first, then balance
Tapping noise could be the exhaust bolowing, so have a listen round for that too.

Re: lack of power
anywhere in the middle is good. I personally go for just over half way in between the two markers.

Re: lack of power
When you say lack of power do you mean that upon opening the throttle the bike pauses, bucks a little, accelerates but doesn't do it smoothly? If yes, this could be indicative of weak mixture but with #100 jets I wonder. Have you checked the other jets and needle for sizing? With this sort of carb the entire operating range from tickover to W.O.T. (wide open throttle) uses several different yet inter related circuits. At idle the fuel is metered by the pilot jet and partially by the needle. 1/4 to 1/2 throttle is more needle and a little main jet, 1/2 to 3/4 is mostly needle and main jet and W.O.T. is main jet supplemented by needle (but usually this is mostly out and therefore passing most of its fuel) with a hint of pilot for good measure.
Frankly, changing just one of these independant to the others is an exercise in frustration unless you happen to hit it right more by luck than judgement, if you see what I mean? By far the best method of checking mixture quality at any throttle opening is a plug chop whereby you whizz off about the landscape, hold the throttle steady at a given position and switch off so the action of closing the throttle does not artificially colour the plug tip. Obviously a handy lay-by and dollop of patience to remove the tank, surge tank and plugs is required as is a good lookout to maintain safety. You could also pop it on a dyno, more user friendly, less dangerous and all your tools etc. will be handy to make the necessary adjustments. What you are looking for is a chocolate brown coloured plug tip. Darker is too rich and lighter is too lean. Some exponents of carb theory have you looking up the tip of the plug with a lamp for the carbon ring to check the timing but I'll leave that for a future thesis.
Hope this helps,
Mick.
